500g grated Monterey Jack cheese (plus extra for garnish)
1 small onion, finely chopped
1 green bell pepper, diced
2 garlic cloves, minced
2 large eggs, lightly beaten
250g double cream (or half-and-half for a creamier texture)
Salt and pepper, to taste
